I don’t know about your kids, but my kids LOVE mac-n-cheese!  It’s one of those meals that make childhood great.  As a parent, the challenge is to make a meal that is packed with nutrients and one your kids will want to eat.  This recipe will make both parents and kids happy.  It’s creamy, deceptively nutritious, and free from dairy, egg, and gluten.

Not only is this recipe tasty, but it’s FULL OF FLAVOR which your kids will love!  Parents will love that this recipe is packed with over 7 grams of protein per serving and makes a great meal for lunch or dinner.

Our family loves to play around with different ingredients to add into our mac-n-cheese.  In the recipe below, I topped our mac-n-cheese with chives, bacon, and sour cream, but you can add anything your heart desires!  Try adding BBQ chicken or even sausage. (Let’s all have a moment of silence for sausage.  I think I just drooled on my keyboard.)

Another idea would be to create a mac-n-cheese bar with different toppings like more cheese, (Yes, please!), ham, diced peppers, or steak.  This is a family favorite in our home.  I think our kids love it because they get to create their own mac-n-cheese miracles (their words not mine).

  1. In a large pot bring 4-6 quarts of water to a boil. Add salt to taste. Cook pasta according to instructions on box. Once fully cooked, drain and set aside.
  2. Drain the chickpeas and add to blender with chicken stock. Blend for about one minute. Mixture should be runny.
  3. Begin preparing the sauce by placing a large skillet on medium low heat. Melt the dairy free butter and cheese. Continue to stir cheese mixture and add chickpea liquid.
  4. Continuing to stir the melted cheese, slowly add in dairy free milk and dairy free cream cheese while whisking. Stir for two minutes over medium heat.
  5. Add pasta to the cheese. Sprinkle with bacon and top with sliced green onions.
